Three timber lodge buildings, Stavolo di Sotto, Stavolo di Mezzo and Stavolo di Sopra, hold fifteen suites above Lake Sauris. Stone floors and aged wood sit alongside cosmopolitan design touches. The Fogolar open hearth anchors Il Ristorante. Outside, alpine pastures climb toward Malga Festons at 1,830 metres. Sauris itself is an ancient Carnic village with a Germanic linguistic heritage and a deep artisan food culture.
Borgo Eibn is inseparable from Carniagricola, the family's own organic farm with over a century of continuous operation. Raw milk becomes unpasteurised cheese. Hams cure with nothing but salt and smoke. The kitchen, the land and the lodge share one family, one philosophy. This is a place where food is the tasty guardian of ancient values.
Malga Festons sits at 1,830 metres above the lodge. Guests walk up to the family's alpine pasture to witness traditional Carnic farming firsthand, from cheesemaking to cattle tending. The surrounding Carnic Alps open trails through forests, high meadows and ridgelines in every season.
Back at the lodge, garden sun loungers face Lake Sauris. The spa circuit provides a quieter counterpoint to the mountains. Passo della Mauria connects Sauris to the Cadore valley, extending the range of day hikes and driving routes through the Dolomite foothills.

Sustainability at Borgo Eibn is not a programme. It is a century of continuous practice. The family behind the lodge grew up in the midst of nature, of which they feel an integral part. Carniagricola, their own farm, has operated for over a hundred years on the same Carnic land, producing food with methods passed down through generations.
Cheeses come from raw, unpasteurised whole milk. Cured meats and hams preserve with salt and smoke only, never chemical additives. Traditional aging and curing timescales are respected without compromise. The restaurant follows the Slow Food philosophy, sourcing exclusively from the farm's own organic production. Every plate served at Il Ristorante closes a loop that begins and ends on this mountainside.
