Le Restaurant centers its kitchen on Alpine terroir, guided by memberships in Slow Food, Fait Maison, and Saveurs du Valais. The chef sources Valais products, cured meats, mountain cheeses, herbs, and shapes them into a three-course bistronomic surprise menu each evening. Guests never choose; the chef decides based on what arrives fresh. A central fireplace anchors the dining room, where custom-made armchairs face panoramic views of the Wallis summits. On the terrace, those same peaks frame every plate in daylight. Vin de Glacier deserves its own moment. This rare Swiss white wine is part of Switzerland's culinary heritage and produced in such small quantities it cannot be bought, only tasted here, on the spot.
